Strawberry Recipes for Spring

It’s spring and in Atlanta, the world is turning green, flowers are blooming, and strawberries are here. Now is the perfect time to use the bounty of strawberries in all your recipes at home. Fresh local strawberries will be gone again before you know it, so get on board with these fun ideas today. 

Cinnamon Strawberry Sundaes

  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • ¼ tablespoon ground cinnamon
  • 2 cups sliced fresh strawberries 
  • 2 cups vanilla ice cream 
  • 1 teaspoon grated lime zest 

In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, lime juice, and cinnamon. Cook until the sugar is dissolved. Add the strawberries and cook until tender. Serve over scoops of ice cream and sprinkle with lime zest. 

Strawberry Basil Refresher

To quench your thirst, we have a recommendation for a drink that will fill you with the feelings of spring. Strawberry goes well with basil, which is also plentiful this time of year. 

  • 2/3 cup lemon juice
  • ½ cup sugar
  • 1 cup sliced fresh strawberries
  • 1-2 tablespoons chopped fresh basil 
  • 1 liter club soda
  • Ice

Add the lemon juice, sugar, ice, and strawberries to a blender and blend thoroughly. Add the chopped basil and pulse a couple of times to combine. Divide the mixture into glasses and top with club soda. 

If you’re feeling like a little cocktail, add liquor of your choice. A lovely botanical gin would be delicious as would a milder vodka. 

Blue Cheese Stuffed Strawberries

If you need to make a small bite to share with your family or your pod, blue cheese stuffed strawberries are a great appetizer. It’s as simple as hollowing out large strawberries and stuffing them with a mixture of cream cheese and blue cheese. Sprinkle with chopped pecans and a drizzle of balsamic reduction.
